Swap the turkey for our Signature Rotisserie Duck

 
A simple yet elegantly-prepared whole rotisserie duck; the legs and thighs are slow-roasted for three hours and the breasts are pan-seared medium-rare.

We provide easy step-by-step instructions how to heat and serve your duck alongside duck fat potatoes tossed in a salad of baby kale, winter citrus, and vinaigrette.

The final component — a duck jus reduction — is included to be reheated and served at your table.

Four Star Mushrooms grows seven varieties of mushrooms year-round, earning acclaim from some of the best chefs in Chicago. Quality and sustainability are their M.O.; transforming organic byproducts from nearby industries into fuel for their ‘superfood’ mushrooms, which in turn produce a nutrient-rich soil amendment used to regenerate soil and support their food system. Their model represents a novel, carbon-negative, zero-waste, vertically integrated approach to food production.
